The karahi is the deep rounded pan of Pakistan, forged from cast iron or pressed steel, with two handles and steep sides, set over an open flame to cook the spiced stew that shares its name. The name of the vessel has passed to the dish itself, and a karahi of lamb, chicken or vegetables cooked with tomato, green chilli and ginger is one of the most familiar foods of Pakistani homes, roadside dhabas and bazaars, served hot straight from the pan with fresh naan.
